Brekky Bites

INGREDIENTS

• 200g (12) Pitted Medjool Dates

• 250g (1/2 cup) Peanut Butter (good quality)

• 160g (1 cup) Natural Almonds

• 45g (⅓ cup) Sesame Seeds

• pinch of fine Sea Salt

DIRECTIONS

Traditional
Place the dates and almonds into a food processor and blitz it up (the mixture should be mostly fine with some chunkier bits). Tip this into a large bowl. Add the remaining ingredients and mix until combined.

Thermomix
Place the dates and almonds into the TM bowl and chop for 15 SEC / SP 9. Add the remaining ingredients and mix for 5 SEC / SP 5.

Line a baking tray with baking paper and press the brekky mix firmly into the tray. Bake in the oven at 160°C for 15 MIN.

Once cooked, remove the tray from the oven and allow it to cool completely. Crumble into pieces with your hands.

NOTES

Store in an airtight container for up to 2 weeks.

Serve with your choice of plant-based milk and fresh fruit.
