Macadamia Choc Cookies

INGREDIENTS

• 50g (¼ cup) Organic Coconut Oil

• 140g (1 cup) Brown Sugar

• 5g (1 tsp) Organic Vanilla Bean Paste

• 65g (¼ cup) Plant-based / Nut Milk

• 180g (1 ¼ cup) Wholemeal Plain Flour

• ½ tsp Bicarb Soda

• ½ tsp Baking Powder

• ¼ tsp fine Sea Salt

• 30g (¼ cup) Macadamia Nuts - roughly chopped

• 40g (¼ cup) Chocolate Chips (dairy free)

DIRECTIONS

Traditional
Using a large bowl, mix the coconut oil and brown sugar together. Add the vanilla bean paste, plant-based milk and mix again. Add the flour, bicarb soda, baking powder, salt. Stir until a cookie batter forms. Gently mix in the macadamias and chocolate chips.

Thermomix
Add the coconut oil and brown sugar into the TM bowl. Mix 10 SEC / SP 4. Scrape down the sides of the bowl and repeat the mixing. Add the remaining ingredients except for the nuts and choc chips. Mix 40 SEC / SP 4. Add the nuts and choc chips and stir 20 SEC / REVERSE / SP 2.

Line 2 baking trays with baking paper. Using a spoon, scoop the mixture and roll into balls. Place each ball onto the tray and slightly flatten each one.

Bake in the oven at 180°C for 12 MIN.

NOTES

Allow to cool completely before storing in the pantry in an airtight container. These will last for up to 1 week.

You can leave out the nuts and increase the chocolate for a nut free version.
