Nourish Stew

INGREDIENTS
• 200g (1 cup) Organic Basmati Rice
• 75g (½ medium) Brown Onion
• 3 Garlic Cloves
• 2cm cube fresh Ginger
• 15g (1 Tbsp) Olive Oil
• 300g (¾ medium) Sweet Potato
• 230g (2) Roma Tomatoes
• 2 tsp Garam Masala powder
• ½ tsp Cumin powder
• ¼ tsp ground Black Pepper
• 20g (1 Tbsp) Vegetable Stock Paste
• Handful of fresh Coriander Leaves
• 1 x 400g tinned Diced Tomatoes
• 1 x 400g tinned Organic Coconut Cream
• Juice of ½ Lime
• 35g (¼ cup) Frozen Peas
• 1 x 400g tinned Chickpeas
DIRECTIONS
1. Rinse the rice under water. Add to a small saucepan with 1 ½ cups filtered water. Bring to the boil, then simmer for 10 MIN or until the water is absorbed. For TM method the notes – this just extends the overall time of the recipe.
Traditional
Peel and finely dice the onion, garlic and ginger. Add to a large frypan (with a lid) along with the olive oil. Sauté for 2 MIN.
Peel and dice the sweet potato into 2cm cubes. Cut each roma tomato into 8 pieces. Add the sweet potato, tomatoes, garam masala, cumin powder, black pepper, vegetable stock paste, coriander leaves, tinned tomatoes, tin of coconut cream and lime juice to the frypan. Stir together, place the lid on and turn the heat to med - low. Cook for 20 MIN stirring occasionally. Add the frozen peas and drained chickpeas. Stir for 2 MIN.
Thermomix
Peel the onion, garlic and ginger. Place these into the TM bowl and chop 1 SEC / SP 7. Scrape down the sides of the bowl. Add the olive oil and sauté for 3 MIN / VAROMA / SP STIR.
Peel and roughly chop the sweet potato. Add to the TM bowl. Chop for 5 SEC / SP 4. Cut each Roma tomato into 8 pieces. Add to the TM bowl with the garam masala, cumin powder, black pepper, vegetable stock paste, coriander leaves, tinned tomatoes, tin of coconut cream and lime juice.
Cook for 18 MIN / 120˚C / REVERSE / SP 1. Add the frozen peas and drained chickpeas and cook for 2 MIN / 120˚C / REVERSE / SP STIR.

Serve over the cooked rice into bowls and enjoy.
NOTES
Cooking the rice in the Thermomix
1. Rinse the rice under water first.
2. Add it to the TM simmering basket.
3. Insert the basket into the TM.
4. Add 1000g filtered water.
5. Cook for 15 MIN / 100˚C / SP 4.
6. Discard the liquid once cooked.
