INGREDIENTS
225g (1 ½ cups) Natural Almonds / OR 2 cups loosely packed almond meal
45g (⅓ cup) Sunflower Kernels
20g (2 Tbsp) Chia Seeds
55g (¾ cup) Organic Shredded Coconut
75g (¾ cup) Organic Cacao Powder
120g (⅓ cup) Organic Rice Malt Syrup
145g (8 pitted) fresh Medjool Dates
8 drops dōTERRA Peppermint Essential Oil
DIRECTIONS
Traditional
Add the almonds, sunflower and chia seeds into a food processor and blitz together. Add remaining ingredients and the food grade essential oil and blitz again to combine.
Thermomix
Add the almonds, sunflower and chia seeds into a food processor and blitz for 10 SEC / SP 10. Add remaining ingredients and the food grade essential oil and blitz for 30 SEC / SP 9.
Scoop out tablespoon size amounts of mixture and roll in the palms of your hands until a ball shape forms. Roll each ball in organic desiccated coconut.
NOTES
*If the mixture is a bit dry, add either 1 Tbsp of Rice Malt Syrup or another date (some dates are drier than others and we want those big soft ones), so that the mixture holds together.
