Pickled Red Onion

INGREDIENTS
• 1 medium Red Onion
• 1 cup White Wine Vinegar
• 2 1/2 Tbsp Raw Sugar
• 1 Tbsp fine Sea Salt
• 1 tsp whole Black Peppercorns
DIRECTIONS
Traditional
In a small saucepan add the white wine vinegar, sugar, salt and peppercorns. Bring to a near boil, then remove from the heat.
Thermomix
Place the white wine vinegar, sugar, salt and peppercorns into the TM bowl. Cook for 5 MIN / 90˚C / SP 2.

Thinly slice the red onion and place into a glass jar (with a lid). Strain the liquid mixture into the glass jar. Discard the peppercorns. Allow to cool for 1 hour, before placing the lid on.
NOTES
Store in the fridge for up to 3 weeks.
Use in salads, sandwiches or on the Mexican Share Plate.
